Kale is a cruciferous vegetable belonging to the Brassica Oleracea species of cabbage. The curly green leaf has increased in popularity in recent years due to its association with excellent health benefits and incredible nutritional profile. Kale has an extensive history, dating as far back as 2000 BCE where it was first cultivated for food in the eastern Mediterranean and Asian regions. Growing well in winter, kale is highly resilient to cold temperatures and heavy frosts making it well suited to the northern regions of the world, providing a source of nutrients during a time where little else can be grown. World War Two saw the recognition of the benefits of kale cultivation as growth was encouraged during the Dig for Victory campaign, compensating for the malnourishment caused by rationing.
Classified by leaf type, there are different varieties of kale growing all over the world – ranging from Italian Cavolo Nero to Kai-Ian Chinese kale. Curly leaf kale is a more familiar variety to the UK and is associated with preventing oxidative stress, stimulation of the immune system and decreasing the risk of cancer.
